Pinto beans are an excellent source of low-fat, plant-based protein and fiber. Earthy, nutty, and creamy. Delicious in soups, stews, dips, chilis, and burritos. Excellent when mixed with rice. Soak beans overnight, drain and rinse. Add beans to pot and cover with 3" of water. Bring to a boil, reduce heat, and simmer for 1-2 hours until tender. Check beans every 15 minutes for doneness.
